Shrimp Fried

Ingredients (Serves 4)

For the Fried Rice:

2 cups (400g) cooked and cooled jasmine rice (preferably day-old)

1 lb (450g) shrimp, peeled and deveined

2 tablespoons vegetable oil

½ cup (75g) onion, finely chopped

2 garlic cloves, minced

½ cup (75g) carrots, diced

½ cup (75g) peas (fresh or frozen)

2 eggs, beaten

3 tablespoons soy sauce

1 tablespoon oyster sauce (optional)

1 teaspoon sesame oil

½ teaspoon ground white pepper (or black pepper)

2 green onions, chopped

1 teaspoon fresh ginger, grated (optional)

For Garnish (Optional):

Extra green onions

Sesame seeds

Directions

Prepare Ingredients

Cook shrimp in 1 tablespoon oil over medium-high heat until pink and opaque (2-3 minutes per side). Remove and set aside.

Sauté Vegetables

Add remaining 1 tablespoon oil to the pan.

Sauté onions, carrots, peas, and garlic for 2-3 minutes, until softened.

Cook the Eggs

Push vegetables to one side of the pan.

Pour in beaten eggs and scramble until fully cooked.

Add Rice & Seasonings

Stir in cooked rice, breaking up any clumps.

Add soy sauce, oyster sauce, sesame oil, and white pepper.

Mix everything well and stir-fry for 2-3 minutes.

Finish with Shrimp & Green Onions

Return shrimp to the pan and toss to combine.

Stir in chopped green onions.

Serve & Enjoy

Garnish with extra green onions or sesame seeds if desired.

Serve hot!
