. Get Organized
Preheat your oven to a warm setting (200°F/93°C) to keep the chicken warm between batches.
Prepare a baking sheet lined with parchment paper or aluminum foil and place a wire rack on top to keep the chicken warm and crispy.
Add all the honey garlic sauce ingredients (honey, garlic, soy sauce, and black pepper) to a saucepan large enough to hold the fried chicken later.
Marinate the Chicken
In a medium bowl, whisk together the 2 egg whites, 1 tablespoon cornstarch, and a pinch of salt (or any additional seasonings you like). Whisk until fluffy and well-blended. Toss the chicken pieces in the mixture to coat evenly. Let the chicken sit in the marinade for 10-15 minutes while you heat the oil.
Heat the Oil for Frying
Fill a large skillet or wok with 1 inch of oil and heat over medium-high heat to about 350-360°F (177-182°C). Use a thermometer if you have one, or test the oil by dropping in a small piece of bread—if it sizzles and turns golden within 30-40 seconds, the oil is ready.
Fry the Chicken
Once the oil is hot, carefully add the marinated chicken pieces one at a time to the skillet, being careful not to overcrowd the pan. Fry the chicken in 2-3 batches depending on the size of your skillet, cooking each piece for about 3-4 minutes until golden brown, turning once halfway through.
Use a slotted spoon to transfer the fried chicken to a plate lined with paper towels to drain any excess oil. Place the chicken on the prepared baking sheet and keep it warm in the preheated oven while you fry the remaining batches.
Make the Honey Garlic Sauce
While the chicken is frying, bring the honey garlic sauce (honey, garlic, soy sauce, and black pepper) to a boil in the saucepan over medium-high heat. Let the sauce boil for about 1-2 minutes until slightly thickened. If it becomes too thick, add a small amount of water to thin it out to your desired consistency.
Toss the Chicken in the Sauce
Once all the chicken is fried, add the pieces to the saucepan with the honey garlic sauce. Toss the chicken in the sauce until evenly coated.
Serve
Serve the Crispy Honey Garlic Chicken immediately, garnished with toasted sesame seeds and sliced green onions if desired. This dish pairs beautifully with steamed rice or stir-fried vegetables.
