Ingredients

  • For the Chicken:
  • 4 boneless skinless chicken breasts
  • 1 cup all-purpose flour
  • 2 large eggs beaten
  • 1 ½ cups Italian-style breadcrumbs
  • 1 cup grated Parmesan cheese
  • 1 tsp garlic powder
  • 1 tsp dried oregano
  • ½ tsp salt
  • ½ tsp black pepper
  • 2 cups marinara sauce store-bought or homemade
  • 1 ½ cups shredded mozzarella cheese
  • 2 tbsp olive oil for frying
  • Fresh parsley chopped (for garnish)

Instructions

  • Prepare the Chicken:
  • Preheat the oven to 375°F (190°C). Using a meat mallet, pound the chicken breasts to an even thickness, about ½-inch thick. This ensures the chicken cooks evenly.
  • Bread the Chicken:
  • Set up a breading station with three shallow dishes:
  • In the first dish, place the flour.
  • In the second dish, whisk the eggs.
  • In the third dish, combine the breadcrumbs, Parmesan cheese, garlic powder, oregano, salt, and pepper.
  • Dredge each chicken breast in the flour, then dip it in the beaten eggs, and finally coat it in the breadcrumb mixture. Press the breadcrumbs into the chicken to ensure it sticks.
  • Fry the Chicken:
  • Heat the olive oil in a large skillet over medium heat. Once hot, add the breaded chicken breasts and cook for 3-4 minutes per side, or until golden brown and crispy. The chicken should be cooked through (internal temperature should reach 165°F or 75°C). Remove from the skillet and set aside on a paper towel-lined plate to drain excess oil.
  • Bake the Chicken:
  • Place the fried chicken breasts on a baking sheet. Spoon a generous amount of marinara sauce over each piece of chicken, then sprinkle with shredded mozzarella cheese.
  • Bake in the preheated oven for 10-12 minutes, or until the cheese is melted and bubbly.
  • Serve:
  • Once the cheese has melted, remove the chicken from the oven. Garnish with freshly chopped parsley and serve immediately. Enjoy with pasta, garlic bread, or your favorite side dishes.

Notes

  • You can prepare the chicken in advance and refrigerate it after frying. When ready to serve, just bake it with the marinara sauce and cheese as directed.
  • For a healthier version, you can bake the breaded chicken instead of frying it. Simply spray the chicken with cooking spray and bake at 375°F (190°C) for 20-25 minutes.
